間
A Japanese kitchen on a black-sand coast, where the room is half the meal.
ma. takes its name from 間 — the interval. Not emptiness, but the space between people: the gap across a counter where an order becomes a conversation. We build our plates with the same care, and then we fill the room.
It gets loud in here, and we like it that way. Wood, warm light, a chef calling across the pass, a table next to yours you end up talking to. Sushi and sashimi cut to order. Teppan from the iron. Donburi over rice grown twenty minutes inland by a farmer we know by name.
Pantai Nyanyi is still uncrowded. Come make some noise in it.
賑
At ma., the good part is the part between things. The talk over the counter, the plate passed down the table, the second round nobody planned on.
Named for the Japanese concept of 間 — the meaningful interval between things — our kitchen takes the ingredient seriously and takes itself lightly. Sushi, sashimi, teppan, and donburi, made to be shared out loud.
Come early, stay through. Last order 8:30pm — the good tables fill up before that.

"This isn't just the best sushi in Bali, it's some of the best sushi period. You can tell everything is made with love and care. Everything is incredibly fresh and the portions are insane. I can't wait to go back."

"Classic Japanese food done in such a proper way that it's hard to find elsewhere, especially in Bali. The tempura was fried perfectly, the sashimi was very clean tasting, and the smoked pork belly was something special. This place will put Nyanyi on the map."

"Best best best! I am a sushi lover and this place is definitely one of the best sushi places I have ever visited. The chef paid extra attention to all of the ingredients — from bluefin tuna to the simplest wakame. All super fresh and amazing quality."

"Hidden gem near Nuanu. Honestly wasn't expecting the food to be this good. Everything we ordered was amazing — the Oyakodon was my favourite. Super fresh, great quality, and the service was just as good as the food."

“Real Japanese cooking, not a beach-club version of it. The gyoza alone is worth the trip from Canggu.”
